Veracruz Style Fish Recipe

Huachinango a la Veracruzana (Red Snapper from Veracruz, Mexico)  This dish is not your classic Mexican style cuisine, as it hails from a state on the Gulf called Vercruz.  Veracruz still holds true to its Spanish influences and therefore has similar ingredients from across the ocean, including cloves and olives.  If you like Mediterranean cuisine with a hint of Moroccan, you will LOVE this! 


  • 1 8oz jar Sweet N' Spicy Salsa from Floy's Finest
  • 3 filets of white fish (Red Snapper is the traditional, but Halibut, Tilapia or Trout can also be used)
  • 1/2 cup green olives, chopped (preferrably Italian style or stuffed with pimentos)
  • 1 tbsp capers
  • 1/4 cup chopped pickled (canned) jalapeno peppers *optional if you like it spicier! :)  
  • 1 bay leaf
  • 1/4 tsp ground cloves
  • 1/4 tsp ground cinnamon
  • 1/2 tsp dried oregano
  • 1 tbsp lemon juice
  • 2 tbsp olive oil

Place filets on a platter or plate next to each other.  Mix together 1 tbsp oil, lemon juice, oregano, cloves and cinnamon.  Pour the mixture over the filets on both sides and let marinate 30 minutes.  Heat the other 1 tbsp oil in a saute pan over medium high heat.  Add the fillets to pan and cook each side for apx 2 min or until slightly crisped.  Remove filets from pan.  Add the jar of salsa, bay leaf, olives and capers (and jalapenos, if desired) to the pan and return to boil.  Simmer for 5 minutes, stirring occasionaly.  Place filets back into pan with the sauce and ensure they are slightly covered in sauce.  Cook another 5 minutes or till heated through.  Remove from heat and top pan with lid to seal in flavor and let cool.  Traditional served with side of white rice or potatoes.
